2 15-ounce cans pineapple chunks, 1 cup sugar 6 tablespoons flour 2 cup shredded Cheddar cheese 4 ounces ritz crackers, crushed 1/2 cup melted butter Drain pineapple, reserving 1/2 cup juice. Place pineapple in baking dish. Sprinkle with mixture of flour and sugar. Pour reserved juice over top. Sprinkle with cheese and cracker crumbs. Drizzle with butter. Bake at 350 degrees for 30 minutes.
Serve as a side dish or dessert. Yield: 8 servings.
